This eclair is for the chocolate lovers.  Perfectly baked choux pastry will be filled with chocolate custard and a crunchy layer with cocoa nibs for additional contrast. Then it will be coated with a chocolate glaze.  The chocolate custard here is just as I like it to be: rich, smooth and chocolatey
